These recipes are all filled with layers of flavoured butter cream and preserve and iced with sugar paste.

• Rich boozy fruit cake

Fruit cakes are coated with a layer of almond paste and topped with sugar paste.

All cake exteriors are iced with sugar paste. Sugar decorations are all individually handmade from sugar and tinted with edible food colours.
